Chablis cradle of the most northerly of the prestigious vineyards in Burgundy, has been called « The golden Gate of Burgundy » owing to the delicacy of its wines.
The vineyards of Chablis cover about twenty rural districts: the stoney, clay-chalky soil being ideal for the Chardonnay grape, the only authorized variety.
Its clear wines, fresh and generous on the palate, with a characteristically “flinty” flavour, enjoy a world wide reputation.
A well deserved fame, which today honours the work of passionate men such as Georges and Thomas Pico, passionate wine makers.
In their concern to protect the environment, they have decided to devote all their vineyards to organic cultivation. These wines, with the inherent, unmistakable mineral essence of the Chablis terroir, are produced on land worked in sympathy with nature.
